Recipe: Black Bean and Mango Pico de Gallo

Remember to rinse and drain the beans in this recipe to make sure they don’t bleed and turn the mango black.  Serve chilled.

Ingredients

15.5 ounces – black beans (drained)
1/2 cup – red onion (minced)
2 mangos (peeled and diced)
1 pkg – Mrs. Wages Classic Salsa Mix
2 Tbsp – red wine vinegar

Preparation

  • Small dice or mince the red onion, place into a mesh strainer and run under hot water for 45 seconds or until they start to turn clear, then turn the water to cold to cool off.
  • Allow the beans to drain completely.
  • In a large mixing bowl add the drained and rinsed black beans with the red onion and the Mrs. Wages Classic Salsa mix and blend evenly.
  • Add the red win vinegar and fold in the diced mango.
  • Chill for a couple of hours to allow the seasoning to bloom and all the flavors to blend together.
