  • The Scallop & Tomato Stew features a guacamole seasoning that gives the stew a cilantro and jalapeno flavor. “It blends well with the tomatoes and the softer sweetness of scallop,” adds Chef Cottage.
  • Swiss Chard Wrapped Salmon with Oranges and Chipotle Salsa features sweet and spicy salsa and complements the salmon perfectly, as well as poultry that can be served as an appetizer with pita chips. The smoky chipotle and heat level of Mrs. Wages Chipotle & Garlic Salsa seasoning is a unique flavor to contrast the oranges.
  • Shrimp Ceviché Tacos feature fresh citrus fruits including lime, orange and grapefruit along with Mrs. Wages Fruit and Cilantro salsa mix. Says Chef Cottage, “The acids from the citrus fruit ‘cooks’ the shrimp in a marinade overnight – firming its flesh and turning it opaque. The Scallop & Tomato Stew features a guacamole seasoning that gives the stew a cilantro and jalapeno flavor.

Ingredients:
2 pounds of Scallops
1 can (15-1/2 oz) of diced tomato
1 medium onion, diced (1 cup)
1 pkg. of Mrs. Wages Gaucamole Mix®
1 cup White Wine
2 oz. of butter

Preparation:

  • In an oven-safe pan, pour the scallops (thawed if frozen) into the pan.
  • Top with the drained diced tomatoes the onions and the white wine and mix together evenly.
  • Sprinkle the top with the Mrs. Wages Guacamole Mix® evenly.
  • Cut the butter into thin pieces and place randomly across the top of the scallops.
  • Place into a preheated 350º for approximately 8 to 10 minutes or until the scallops are firm to the touch.
  • Pour into a service dish and ready to serve.

Yield: 6 to 8 portions.

Note: If the scallops are not dry packed the brine from canned will release and need to be drained off. If this is the case, precook the scallops half way prior to adding the stew ingredients.

Swiss Chard Wrapped Salmon with Oranges and Chipotle Salsa features sweet and spicy salsa and complements the salmon perfectly, as well as poultry that can be served as an appetizer with pita chips. The smoky chipotle and heat level of Mrs. Wages Chipotle & Garlic Salsa seasoning is a unique flavor to contrast the oranges.

Salsa Ingredients:

zest of 1 large navel orange
2 large navel oranges
1 pkg. of Mrs. Wages Chipotle & Garlic Salsa

Other Ingredients:
2 tsp. of Extra Virgin Olive Oil
4 – 4 oz Boneless, Skinless Salmon Fillets
4 – Large Swiss Chard Leaves, trimmed

Prepare Salsa:

  • Zest one of the oranges into a medium size bowl.
  • Quarter the two oranges, slice the peel off of the segments and coarsely chop the oranges. Place in the bowl.
  • Add one package of Mrs. Wages Chipotle & Garlic Salsa Mix.
  • Combine well and let stand 15 – 20 minutes.

While the salsa is resting:

  • Preheat Oven to 425°F
  • Grease the bottom of a baking dish with 1 tsp. oil; set aside.
  • Brush salmon all over with remaining teaspoon of oil; season with salt and pepper.
  • Using a fork, mash the rib of each chard leaf to make it more pliable.
  • Arrange each salmon fillet on one of the chard leaves and spoon a generous helping of the salsa over each.
  • Wrap salmon and salsa in the chard leaves, folding in the leaf ends to make 4 packages.
  • Arrange in baking dish, seam-sides down. Bake about 15 minutes and serve.

Shrimp Civeché Tacos feature fresh citrus fruits including lime, orange and grapefruit along with Mrs. Wages Fruit and Cilantro salsa mix.

Ingredients:
1 pound of shrimp
1 small red onion (julienne)
1 small red pepper (julienne)
1 (ea) Jalapeno (julienne)
2 (ea) lime Segments
2 (ea) orange Segments
1 (ea) grapefruit Segments
2 cups of grapefruit Juice
2 pkgs of Mrs. Wages Fruit and Cilantro Salsa Mix®
1 cup of Red Wine Vinegar
8-10 Flour Tortillas 6”

Preparation:

  • Clean and rinse the shrimp, then cut into medium size chunks.
  • Cut the segments from the Oranges, Limes and the Grapefruit and place into a large bowl with the shrimp.
  • Add the julienne cuts of the onion, red pepper and the jalapeno pepper.
  • Add the red wine vinegar the grapefruit juice and the Mrs. Wages Fruit and Cilantro® seasoning packs.
  • Mix all together well and allow to marinade for 6 to 8 hours or until shrimp are firm to the touch.
  • Drain the marinade off and save.
  • With a slotted spoon place a spoonful into the center of a softened 6” flour tortilla skewer to hold together.
  • Served here with a mixed green salad tossed in the marinade topped with blue cheese crumbles.

Yield: 6 to 8 Tacos, depending how full you make them.
